A rotary oven for bakery, also called a rotary rack oven, is an industrial baking oven that uses a rotating trolley together with forced hot air circulation. During baking, the rack trolley slowly rotates while hot air flows evenly throughout the chamber, eliminating hot spots and ensuring every product is baked to the same color, texture, and moisture level.

Compared with conventional deck ovens, a rotary oven requires less manual intervention because there is no need to rotate baking trays during production.

How Does the Rotary Oven Work?

The rotary oven for bakery consists of a heating system, hot air circulation system, rotating mechanism, insulated baking chamber, and intelligent control panel.

The working process is simple:

  1. Load the baking trays onto the rack trolley.
  2. Push the trolley smoothly into the oven along the guide rails.
  3. Lock the trolley onto the rotating mechanism.
  4. Set the baking temperature and baking time.
  5. The trolley rotates continuously while high-temperature hot air circulates inside the chamber.
  6. After baking is complete, the trolley can be pulled out easily for unloading.
